Simple and exquisite. The main Spanish gastronomy specialists agree on these two adjectives to describe the Pastel Ruso by Ascaso. It contains hazelnut, almond, egg white, praline foam and a touch of the Ascaso secret magic. Its original texture – both spongy and creamy – and its intense almond and hazelnut flavour make each bite an incredible sensory experience. Ascaso has been making it since 1974. Although it is free of any preservatives, its particular characteristics allow it to keep well for quite a long time, enabling it to ‘travel’, which is also part of the secret to its success. It can be stored in an ordinary refrigerator and it is best enjoyed closer to room temperature (18–20ºC), although it can be served warmer or cooler as preferred. Stored at 0–6ºC, it keeps for two months. As it contains no wheat flour, it is suitable for a gluten-free diet.
